The hot days of summer are just around the corner (or are already here if you live in Florida like me) and this Protein Acai Bowl is the perfect way to cool down. There’s something so refreshing about a smoothie IN a bowl! It makes you feel like you're eating so much more, and it fills you up.
Acai (pronounced ah-sigh-ee) is the star ingredient in this recipe. I made it easy by using the frozen pre-packed packets from Trader Joe's, but if you don't have a TJ's around you, you can also use freeze-dried acai powder. Acai is a great source of protective antioxidants, omega-3 fatty acids, and other nutrients like vitamin A, amino acids, and calcium. As a fruit, it’s also high in fiber.
The key to a packing this smoothie bowl with protein is Run Everything Lab's New Vegan Protein Flavor: Big Berry. The berry flavor compliments the Acai PERFECTLY, without being too sweet or too bitter. It makes the consistency absolute perfection for what an Acai Bowl is supposed to be.
You can also spice this recipe up by adding frozen fruits to the base, if your Macros allow for it. Sweet fruits like strawberries and mango complement the tart flavor of acai the best. You can also top the acai bowls with any of your favorite fixings! I chose to go with some very Macro-friendly options, but feel free to get crazy (it's even yummier to go crazy). There is no wrong you can do with toppings! Popular choices are fresh fruit, granola, nut butters, hemp seeds, etc. Crazy and delicious toppings also include: Yogurt, Chocolate, Cookies (golden oreos are amazing), chocolate chips and shredded coconut. Get creative with your acai bowls, and enjoy!
